The holidays are here. I know everyone is looking forward to Turkey day. This week, here are 2 recipes great for the holiday table.
4 large Russett Potatoes (about 3 1/2 pounds)
16 ounces Sour Cream
16 ounces shredded Pepper Jack Cheese
1 cup Green Onions, chopped
1 teaspoon Salt
1 teaspoon Black Pepper
1 cup shredded Parmesan Cheese
2 tablespoons Olive Oil
Preheat oven to 400℉. Wrap potatoes in foil and bake until softened but not cooked through, about 1 hour. Let cool and refrigerate overnight.
Preheat oven to 350℉. Peel and slice potatoes 1/2-inch thick. In a medium bowl, combine sour cream, Pepper Jack cheese, green onions, salt and pepper. In a 11x7-inch baking dish, layer potatoes alternately with cheese mixture. Top with Parmesan and drizzle with olive oil. Bakr=e for 45 minutes or until the potatoes are tender and top is golden brown.
