Bacon Brown Rice

Does bacon make everything taste better? Try this recipe and see if it elevates rice.


4 slices thick-cut bacon, chopped

1 1/2 cups brown rice

3 1/2 cups water

1 1/4 teaspoons kosher salt

1/4 teaspoon crushed red pepper


In a large saucepan, cook bacon over medium heat until crisp, about 12 minutes. Remove bacon using slotted spoon, and let drain on paper towels, reserving 1 tablespoon drippings in pot.

Add rice to drippings; coo, stirring frequently, until toasted, about 3 minutes. Slowly add 3 1/2 cups water, salt, and red pepper. Bring to a boil. Reduce heat, cover, and simmer until rice is tender and water is absorbed, 45 to 50 minutes. Remove from heat; let stand for 10 minutes. Add bacon, and fluff with a fork.
