Brown Butter-Fig Pie

Who want's some pie? This week, I'm sharing two versions. If you really want to be ambitious, you can make your own pie crust.


9-inch premade pie crust.

3 (7-ounce) bags dried Mission figs, halved

1/2 cup butter

1/2 cup all-purpose flour

1 tablespoon cornstarch

1 teaspoon kosher salt

3/4 cup firmly packed dark brown sugar

1 teaspoon vanilla extract

4 large eggs


Preheat oven to 350℉.

In a small saucepan, add dried figs and enough water to cover; bring to a boil; reduce to a simmer. Cook until figs are plump, about 15 minutes. Strain figs, and spread evenly over piecrust.

In a small saucepan over medium heat, add butter, and cook until browned and nutty in aroma. Remove from heat, and set aside.

In a medium bowl, whisk together browner butter, flour, cornstarch, salt, sugar and vanilla. Gently whisk in egg; pour over figs. Bake until firm int he center, about 40 minutes. Let cool for one hour and serve with whipped cream.
