Crab Meat Timbale from the Old Brennan's
While dusting my cookbook collection, I pulled out the original Brennan's cookbook. This book was originally published in 1961, a year before I was born. I thought I would share with you 2 crabmeat appetizers this week.
1 chopped Pimento
4 chopped Anchovies
1/2 cup Mayonnaise
3 tablespoons unflavored Gelatin
1 cup Vinegar
1/2 teaspoon Pepper
1/2 teaspoon Salt
1 can Crabmeat
Dissolve vinegar nd gelatin in cup. In a bowl, mix together mayonnaise, chopped pimentos and anchovies. Season with salt and pepper. Add crabmeat; then add the mixture of vinegar and gelatin with ingredients in bowl. Mix well. Put in cup or mold. Refrigerate for 1 hour.
