The low temperatures this week in Arkansas have been in the low to mid 20's. Here is a soup that is quickly made and packed with flavor.
1 stick Butter
2 tablespoons Flour
1/2 cup Onions, finely chopped
1 pound Crawfish Tails
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Worcestershire Sauce
1/2 pound Cheddar Cheese, grated
Tabasco Sauce, to taste
1 tablespoons Parsley, finely chopped
1 tablespoon Green onions, finely chopped
1 quart Milk
Melt butter and blend flour; don't let to brown. Add onion ad cook on low heat until clear. Add crawfish tails, salt, Worcestershire, Tabasco, black and red pepper. Cook over low heat 15 minutes. Add cheese, milk, parlsey, and green onions. Blend well. Simmer for 5 minutes and serve in boils over rice.
