Eggplant Dressing

Updated: Mar 21, 2021

Thanksgiving is almost here. While turkey takes the main stage, the sides are what complete the dinner. I am sharing two this week that are great any time of the year.

3/4 pound Ground Beef

3/4 pound Ground Pork

2 cups Onions, chopped

1/2 cup Celery, chopped

1/2 cup green Bell Pepper, chopped\4 medium-sized Eggplants, peeled and chopped

1 cup Chicken Stock

Creole Seasoning to taste

Pinch of Thyme

3 cups cooked white Rice

2 tablespoons fresh Parsley, chopped

Brown the beef and pork in a large heavy pot or Dutch oven. Add the onions, celery, and bell pepper and cook, stirring often, until they are wilted, about 5 minutes. Add the eggplant and stock, and simmer until the eggplant is very tender and soft. Mash with a fork. Season with Creole seasoning. Add the thyme, rice and parsley. Mix well and serve warm.

Enjoy!!!
