Alligator Sausage

Let's go into the bayou for the recipes this week. Here's is tow featuring the Louisiana Yard Dog, Alligator.


3 pounds ground alligator meat

2 pounds ground pork

1/2 pound ground pork fat

1 cup ice water

1/2 cup minced yellow onion

1/4 cup minced celery

1/4 cup miced red bell pepper

1/4 cup minced garlic

1/4 cup minced parsley

1/4 cup sliced green onion

2 tablespoons chopped fresh basil

1 tablespoon chopped fresh sage

Creole seasoning, to taste

15 feet hog casing (optional)


In a large bowl, combine alligator, pork, pork fat, 1 cup water, yellow onion, celery, bell pepper, garlic, parsley, green onion, basil, sage, and Creole seasoning. Using both hands, blend well, mixing until fat content of pork coats surface of mixture. (This step is imperative if the sausaage is to be moist and juicy, because alligator is quite dry.) Stuff alligator mixture in hog casing (is using) and tie off in 6-inch links, or rool into boulettes or patty sausage.
