Barbecued Pork n Beans

A cookout is not complete without beans. Here's a recipe in which the variations depend on the types of sauce and beans you use.


1/4 cup bacon drippings

1 cup chopped onion

1 medium green pepper, chopped

1 cup chopped green onions

1 pound lean ground pork

2 (22-ounce) cans baked beans

1 pound crisp-cooked bacon, crumbled

1/2 cup of your favorite barbecue sauce


Heat bacon drippings in a 5-quart cast-iron Dutch oven over medium heat. Add onion, green pepper and green onions; sauté until caramelized. Add ground pork and cook, stirring, until brown and crumbly. Drain and discard any grease. Add beans, bacon crumbles and barbecue sauce; stir until incorporated. Place Dutch oven on grill (or in oven) preheated to 350℉, uncovered. Cook until beans caramelize around edges and sauce has thickened, about 45 minutes.
