BBQ Crawfish Tails

The sauce that BBQ Shrimp are prepared in is perfect for other seafoods. Here, we give crawfish tails the BBQ treatment.
1 pound of peeled crawfish tails
1/4 pound butter
1/2 cup finely chopped garlic
2 tablespoons Worcestershire sauce
1 tablespoon crushed red pepper
1 tablespoon fish sauce
2 teaspoons fresh minced rosemary
1 cup seafood stock
2 teaspoons minced fresh parsley
1 teaspoon kosher salt, or to taste
1/4 teaspoon ground black pepper, or to taste
Garnish: lemon wedge, sliced green onions, fresh parsley sprigs
In a large skillet, melt butter over medium heat. Add garlic, and cook until totally soft and not too brown, 8 to 20 minutes, adjusting heat as necessary to avoid excess browning.
Stir Worcestershire sauce, red pepper, fish sauce, and rosemary into garlic butter. Add seafood stock, and bring to a boil over medium heat. Reduce heat to medium-low, and simmer until well reduced, about 10 minutes.
Add crawfish tails to sauce, and simmer for 5 minutes.Sprinkle with salt and black pepper. Once tails are delicious, serve immediately. Garnish with lemon wedges, green onions, and parsley, if desired.
