Oysters Broiled in a Garlicky Herb Butter

Here's a take on Char Grilled Oysters. There's no need to light up your grill. Turn on your oven to broil and let's go.


Rock salt

1 cup butter, softened

1/4 cup chopped fresh parsley

1/4 cup chopped fresh tarragon

1/4 cup chopped fresh chives

2 tablespoons minced garlic

1 teaspoon lemon zest

1/2 teaspoon kosher salt

1/4 teaspoon cayenne

16 ounces shucked oysters

1 cup freshly grated Pecorino Romano cheese


Preheat oven to broil. Line a large rimmed baking sheet with rock salt.

In a medium bowl, stir together butter, parsley, tarragon, chives, garlic, zest, salt, and cayenne. Place oysters in your choice of shells ( they can be ceramic, metal or real). Arrange them on prepared pan. Divide butter mixture among oysters; top with cheese.

Broil until cheese is melted and edges of oysters are curled, 5 to 7 minutes. Serve immediately with lemon wedges and garnished with parsley, tarragon and chives if desired.
