Casamento's Oyster Stew

Casamento's is the Uptown oyster specialists. They are so depended on oysters that they are closed in the summer months, when oysters are traditionally not available. Everyone waits for the first fall day that Casamento's opens. It is one of my favorite restaurants.


1 medium onion, chopped fine

1/2 cup fresh parsley chopped (optional)

3 sticks salted butter

4 to 6 dozen raw Gulf oysters

1 tablespoon salt

4 cups whole milk


Mix everything except the milk in a large sauce pot, preferably cast iron, and cook over medium heat, stirring until the butter is completely melted and the mixture is simmering, approximately 6 minutes. Add milk and cook until the milk starts to rise in the pot. Do not allow it to overflow. Serve with French Bread.
