Citrus Vinaigrette

This week, I want to share with you a couple of dressings. The first is great over a fruit salad.


1/4 cup sherry vinegar

2 tablespoons fresh orange juice

2 tablespoons fresh grapefruit juice

1 tablespoon minced shallot

1 teaspoon minced fresh garlic

4 1/2 teaspoons honey

1 tablespoon Dijon mustard

1 tablespoon chopped fresh dill

1 tablespoon chopper fresh chives

1 1/2 tablespoons crushed pink peppercorns

1/2 teaspoon kosher salt

3/4 cup olive oil


In a small bowl, whisk together vinegar and juices. Add shallot and garlic, and let mixture stand at least 15 minutes. Add honey and mustard, and whisk until smooth.

Add dill, chives, peppercorns, and salt, whisking to combine. Slowly add olive oil, whisking constantly until combined. Chill at least 2 hours before serving.
