Garlic Mashed Potatoes

An entree is not complete without something accomping the main dish. Here are some Garlic Mashed Potatoes that go great with Monday's pork.
2 pounds Yukon Gold potatoes
2 teaspoons salt
10 large cloves garlic, peeled, coarsely chopped
1 1/4 cups milk
1/2 stick butter, melted
Salt and pepper
Scrub potatoes; place in a large saucepan along with garlic and cover with water. Place over high heat and bring to a boil; cook until potatoes are tender, 25 to 30 minutes. Drain; when cool enough to handle, slip skin off potatoes, if desired. Cut potatoes into chunks and return to pot along with garlic. Heat milk in a small saucepan to a low simmer; pour about half over potatoes and add butter. Using a potato masher or hand mixer, mash potatoes, adding additional milk as needed for desired consistency. Take care not to over-process; a few chunks add an interesting texture. Taste, and adjust seasoning.
