Key Lime Pie
It's been a tough year for many. I want to leave you a couple of sweet recipes to put a good ending to 2020. This week, a couple of pie recipes.
8 ounces cream cheese
1 1/4 cups sugar
1/4 cup key lime juice with zest
1/4 cup sour cream
1 tablespoon flour
2 drops green food coloring
1 9-inch pie crust, lightly pre-baked according to package directions
Preheat oven to 325℉.
In a large bowl, cream the cream cheese and sugar. Add the key lime juice, sour cream and flour; mix well. Add the food coloring and stir. Stir in the eggs, taking care not to overheat. Pour the mixture into prepared pie crust.
Bake for 30 minutes, until the center is set. Insert a toothpick into the center; if it comes out clean, the pie is ready. Allow the pie to cool and then refrigerate preferably overnight before serving.
