Lemon-Purple Rice

How about a couple of ways to jazz up your rice this week? These are great as a side with any dish.

1 3/4 cups water

2 teaspoons lemon zest

3/4 teaspoon kosher salt

1 cup long-grain purple rice

In a medium saucepan, bring 1 3/4 cups water, lemon zest, and salt to a boil over medium-high heat. Stir in rice; cover, reduce heat, and simmer until liquid is absorbed, 15 to 18 minutes. Fluff with fork before serving.
