Mushroom Croquettes

Mushrooms make a great meat replacement. Here's a couple of recipes that highlight mushrooms.


2 large baked russet potatoes

1 medium onion, minced

1/2 pound mushrooms, sliced

3 tablespoons olive oil

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup sliced green onions

2 eggs

1 tablespoon Creole seasoning

Egg Wash ( one egg whisked with 1 cup milk)

Panko breadcrumbs


Preheat oven to 375℉.

Peel and mash, then chill potatoes. Sauté onion and mushrooms in olive oil over medium-high heat for 10 minutes. Add garlic and sauté 2 minutes; add to potatoes and mix well with Parmesan cheese, green onions, eggs, and Creole seasoning; chill. Once completely chilled, for mixture into 2-inch patties, coat with egg wash and breadcrumbs. Bake for 35 minuter or until browned.
