Olive Salad Brochette

The temperature is starting to rise. The Dog Days of Summer are upon us. This week, I am featuring two recipes with very little cooking. Hope you keep cool.


1 1/2 cups black olives, minced

1 cup green onion, minced

1/4 cup cattier, minced

1/4 cup celery, minced

1/2 cup red onion, minced

1/4 cup garlic, minced

3 tablespoons olive oil

2 tablespoons lemon juice

Creole seasoning to taste

2 loaves French bread


Combine the olives, carrot, celery, onion, garlic, olive oil, lemon juice and Creole seasoning in a bowl. Lightly mash together with the back of a spoon. Serve on toasted French bread.
