Shrimp Omelet

The Shrimp Boats are coming! I miss not being able to drive a few minutes to buy shrimp fresh off of the boat. So as I wish, here's a couple of shrimp recipes this week.


3 eggs

1 tablespoon butter

6 large raw shrimp, peeled and diced

1 teaspoon minced garlic

Salt and fresh ground pepper, to taste


In a bowl, whip eggs until well bended and fluffy. Melt butter in an 8-inch sauté pan over high heat. Add shrimp and sauté for 3 minutes or until the shrimp turn pink. Add garlic and cook for 1 minute. Pour eggs into pan; stir with rubber spatula until the eggs begin to firm up. Season with salt and pepper. Allow omelet to cook without stirring for about 1 minute until bottom is golden and top is almost set. Using a spatula, loosen edges of the omelet, then flip; cook for an additional 5 to 10 seconds until set. Fold in half, then slide on a plate. Serve immediately.
