Here's a quick and flavorful dish for a weeknight meal.
2 onions
2 stalks celery
1/2 bell pepper
4 cloves garlic
3 ounces tomato paste
15 ounces tomato sauce
1 pound peeled and deveined medium raw shrimp
4 ounces canned sliced mushrooms
Creole seasoning, to taste
1 quart water
1 pound spaghetti
Shaved Parmesan cheese, for garnish
Chop onions, celery bell pepper, and garlic; cook in a small amount of oil until wilted. Add tomato paste and tomato sauce. Cook over low fire until oily again.
Add shrimp and continue to cook on low fire until shrimp are done. Add mushrooms, season to taste, add water, and bring to a boil. Add spaghetti and cook over low fire, stirring occasionally, until spaghetti is done. Transfer to a serving platter, garnish with Parmesan, and serve immediately.
Enjoy!!!
