Strawberry Vinaigrette

When strawberries are not in season, here's another option. The sweetness of the dressing is a great addition to a summer salad.


1/2 cup strawberry preserves, melted

1/4 cup rice wine vinegar

2 tablespoons honey

1 cup salad oil

1/2 cup extra-virgin olive oil

Salt to taste


Combine melted preserves, vinegar, and honey in a blender. With the blender running, pour oils in a very slow steady stream (this should take about 2 minutes to stream the oils). Taste and adjust with salt. Chill until needed.
