Warm Peach and Bacon Vinagrette

With summer arriving, people are looking for lighter food options. This week, I want to feature a couple of fruit flavored dressings for salads
4 strips bacon, chopped
1 cup finely chopped peaches
1 cup chopped shallots
1 tablespoon minced garlic
1/3 cup white wine vinegar
1 tablespoon honey
1 teaspoon hot sauce
Salt and pepper to taste
in a skillet, over medium-high heat, cook bacon until crisp. Set bacon aside, leaving drippings in the skillet. Add peaches, shallots and garlic; sauté 4 minutes. Deglaze the pan with vunegr, honey and hot sauce. Simmer, stirring vigorously, 2 minutes. Taste and adjust seasonings.
