Banana Nut Bread

Banana's are not my favorite. For some reason, I don't care for the flavor. Don't let that stop you from making this recipe. My wife loves it.


3 very ripe bananas

1/2 cup butter (1 stick), softened

1 cup sugar

1 teaspoon vanilla

2 eggs

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup crushed pecans


Preheat oven to 350℉.

In a small bowl, crush bananas and whip until light. In a larger bowl, cream butter and sugar; add vanilla and eggs and mix well. Sift dry ingredients together and add gradually to egg mixture, beating after each addition. Fold in bananas and nuts. Turn into a well-greases and floured 9x5-inch loaf pa. Bake for one hour, or until a pick inserted in the loaf comes out clean. If making two smaller loaves, reduce baking time accordingly.
