Fresh Marinara Sauce

Let's continue with some sauces that are made in the crock pot.


3 pounds ripe tomatoes

2 tablespoons olive oil

1 large onion, chopped

5 garlic cloves, minced

1 small can tomato paste

2 teaspoons dried basil

1 1/2 teaspoons dried oregano

1 teaspoon salt

1 teaspoon black pepper

2/3 cup dry red wine

2 tablespoons capers (optional)


Peel tomatoes; remove seeds, if desired. Chop into 1/2-inch chunks; place in a slow cooker on low heat.

Heat oil in a skillet over medium heat. Add onion and garlic; sauté 5 minutes or until sweated. Add tomato paste; sauté 4 minutes. Add basil, oregano, salt, and pepper; sauté 1 minute. Deglaze with wine. Pour over tomatoes in slow cooker. Stir well. Cover with lid and cook on low for 4 hours. Porée if desired. Taste; adjust seasonings. Chill until needed.
