Homemade Cracklin'

Here's another set of recipes which the first one is part of the second one. Of course, you could buy cracklin' at the store, but that's half the fun!


3 pounds pork skin with fat

Canola or peanut oil

Creole seasoning blend


Cut pork fat and skin into 2-inch squares, making sure there is both meat and fat on each piece.

Preheat a large cast-iron pot over high heat and add in the pork squares in a single layer when hot. Do not overcrowd the bottom. Cook 1 to 2 minutes, to render some of the fat Add the oil, until the pieces are just covered.

Continue to cook over high heat until the squares are browned and float to the top of the oil, about 2 to 3 minutes more. Remove cracklin' with a strainer and drain on paper towels to absorb the grease. Season to taste and serve warm.
