Oyster Stew

Oysters are really looking good now. I always enjoy a nice bowl of oyster stew. Here's a recipe.


1/2 cup Butter

1/2 cup Green Onions, finely chopped

1/4 cup Shallot, minced

1/4 cup celery, finely chopped

2 cups Whole Milk

1 pint Oysters with their liquor

Salt Hot Sauce

Chopped fresh Parsley for garnish


In a small Dutch oven, melt butter over medium heat. Add green onions, shallot and celery; cook until softened, stirring occasionally, about 10 minutes. Sprinkle with flour and cook, stirring constantly, 5 minutes. Stir in milk and bring to a simmer. (Don't let the milk boil.) Cook, stirring often, until thickened, about 10 minutes. Stir in oysters and liquor. Cook until oysters are cooked through, 5 to 10 minutes. Add salt and hot sauce to taste. Garnish with parsley before serving.
