Oysters with Lemon-Cilantro Mignonette

Nothing taste better than an oyster, seconds after they have been shucked. For those who like a little accompaniment, here's a little sauce for your oysters.

1/4 cane vinegar

1 tablespoons chopped fresh cilantro

2 teaspoons lemon zest

1 tablespoon fresh lemon juice

2 teaspoons fresh minced shallots

One pinch white pepper

12 fresh oysters on the half shell

In a small bowl, whisk together vinegar, cilantro, lemon zest and juice, shallot, and white pepper. Refrigerate until ready to serve, at least 10 minutes.

Stir mignonette well, and spoon over oysters. Serve immediately.
