Everyone ha heard of Taco Tuesday. I enjoy tacos here and there. This week, I want to feature another Mexican food staple, the tamale. We won't be making them, but will use them as an ingredient.
1 1/2 tablespoons olive oil
1 small onion, minced
1 clove garlic, minced
4 tamales, husk removed
3 green onions, sliced
1 jar salsa, divided
Salt, pepper, and/or hot sauce
8 large eggs
3/4 cup grated pepper-jack cheese
Preheat oven to 425℉. Position oven rack to top setting
Heat oil in a 12-inch skillet over medium-high heat. Add onions and garlic; sauté 3 minutes to sweat. Roughly chop tamales; add to onions and sauté 5 minutes or until lightly browned, while breaking with tamales with spatula as you sauté. Remove from heat. Add green onion and two heaping tablespoons salsa; stir well. Taste; adjust seasonings with salt, pepper, and/or hot sauce. Evenly distribute mixture across skillet; press mixture down to level.
Season eggs with 1/2 teaspoon salt and 1/8 teaspoon pepper; beat well. Pour over meat mixture in skillet. Bake for 8 to 10 minutes or until eggs are just set. Remove from oven; increase heat to broil. Cover eggs with cheese; carefully broil until cheese is browned and bubbly. Serve hot with salsa.
